I’m from the hinterland South, I’m the first generation male in my family line who doesn’t know how to process a deer, and I only went proper hunting once or twice. My Dad killed a deer with me once and we cooked and ate it. He and everyone else he knew would freely acknowledge that deer meat is only palatable as jerky or chicken-fried with copious ketchup or other sauce. As a game meat enjoyer (last time i was home i had bear and deer goulash and it was FUKKEN GOOD) the masculinity stuff is so gay. You like it or not. No biggie.
I also very occasionally enjoy raw milk and i find it refreshing, sorry sven!

Bear is probably the one game meat I’ve tried that you could could not convince me could possibly be prepared well. I’ve tried it twice, and both times it was like trying to eat a greasy old boot.
I get not wanting to be wasteful with a hunted animal but in this case just skin the thing and let its meat feed the wildlife or soil.
I have no idea how it would taste as a cut, completely unseasoned, though. In goulash form it was obviously quite soft and just lightly spiced, maybe that’s the best way to consume it. will have to try eating a classic cut next time i’m out east.

I eat venison fairly regularly, I don’t take offense or a blow to my ego or feel a need to argue about it lol, but to answer questions, venison blackstrap and tenderloins are great, little salt and pepper seared medium rare it’s fantastic. You can use it like you would steak but it cooks quickly and has no fat so it’s easy to over cook. The sirloin can make an excellent roast. Pretty much everything else is either pot roast or ground then mixed with beef or pork in Sheppard pie kefta gyro or shawarma meat etc. deer fat is… Read more »
