Particularly in cows with A2 gene vs A1 gene breeds, in which lectins from the plants are uptaken in the meat and milk in the cows. Most milk and beef cattle are in the US A2 breeds. Those lectins are hard for humans to digest often leading to IBS. See nightshade vegetables.

The main benefit to raw milk that I can figure out is it necessitates more local supply amd distributio chains rather than national or global ones, but that’s about it. I’d rather drink raw milk than that fucking weird shelf stable milk that doesn’t need refrigeration.

All yogurt is cultured, ie the bacteria is added into the milk, same with cheese, the only difference is cottage cheese typically uses the cultures present in the raw milk.
It’s cultured so they can control the exact nature of the finished product, similar to how beer uses cultured yeast but there are still beers that use wild yeast such as Belgian lambics. For thousands of years we didn’t use cultured microorganisms we just used the previous batch as a “starter” because we didn’t know about microorganisms, but the starter, no matter how old, always began as a wild batch.
